3/4 lb Mahi Mahi
4 Tbs vinegar
4 Tbs shoyu/soy sauce
2.5 Tbs sugar
1 small red pepper, cut into rings & no seeds
1 tsp ginger, finely chopped
1. Cut fish into thin slices and drain. Dust with cornstarch.
2. Mix all ingredients for sauce.
3. Heat oil to 350, add fillets one at a time. Fry until edges just turn color. Remove & place directly into sauce. Keep in sauce until cool. This is where you may want to put into refrigerator. Turn fish occasionally and serve once all fish is cool.
